
I used to make this all the time. Then my Bundt pan was in storage for years and I forgot about it. I just had it again and feel the need to share it with the world because it really is unbelievably moist, tasty, and just about foolproof.
Quick Dark Chocolate Nirvana
WET
Combine:
2 eggs
1 cup buttermilk or sour milk (I often use 1 c milk with 1 Tbsp vinegar or lemon juice)
1 cup coffee (or you can use cold water if worried about caffeine content for kids or whatever)
1/2 cup vegetable oil
1 teaspoon vanilla
DRY
Combine:
2 cups sugar
2 cups all-purpose flour
3/4 cup cocoa
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
Preheat oven to 325F. Add dry to wet. Beat 2 minutes at medium speed (electric mixer not necessary; I use the same whisk I used on the wet ingredients.) Batter will be thin! Pour into greased Bundt pan (cooking spray is fine; butter or margarine give a slightly crispy top which I quite like.) Bake at least 40 minutes. (The original recipe says 40 minutes; personally, I've always found it took at least 60 until it wasn't runny in the middle anymore.) Cool 5-10 minutes in pan on cake rack; turn upside down out of pan and finish cooling.
This is fabulous all on its own or looks really nice sprinkled with a teeny bit of icing sugar. (Do this right before serving as otherwise the sugar just melts in and vanishes, the cake is so moist.) Drizzling it with melted chocolate is ridiculously decadent and you should try it at least once. Fudge frosting is also very compatible with this cake.
